Recipe Ingredients

Chicken Sausage – This recipe calls for four links of chicken sausage. Option to leave the chicken sausage whole, slice it in half or slice it into coins.

  • I used Smart Chicken organic chicken sausages. They have a variety of flavors, but I used the organic uncured chicken frankfurters and their organic sweet apple uncured chicken sausages. Both tasted amazing, but I really enjoyed the frankfurters. They reminded me of grilling hot dogs as a kid, except these frankfurters are much healthier and better tasting! Made from all organic, clean ingredients you can feel good feeding these chicken sausages to your family.

Vegetables – This recipe calls for petit potatoes, onions and bell peppers.

Oil – You’ll need avocado oil for this recipe. It withstands the high heat from the grill.

Seasoning – Season with kosher salt and cracked black pepper.

Variations

  • Swap the vegetables. Option to try red onion in stead of yellow onions. You can also use any color bell pepper you enjoy most.
  • Spice it up. Add some jalapeno for an extra kick of flavor. You can also try seasoning the vegetables with cumin, chili powder, paprika, garlic powder etc.
  • Swap the chicken sausage. While the organic chicken sausage is incredible, you could use regular beef hot dogs instead.

Expert Tips

  • Shake the foil packet every 10 minutes to prevent the ingredients from getting too brown in any one spot.
  • Make sure you use petite white or red potatoes and slice them in half. They cook more quickly than larger potatoes. You will also want to toss them with a little avocado oil. This will prevent sticking.
  • If you want, try sprinkling a touch of shredded mozzarella cheese over the top of the ingredients just as they come off the grill. The cheese will melt from the heat of the packets and tastes delicious.

How to Make

  • Preheat the grill to 400 degrees. Pull a piece of aluminum foil that is 18 inches long and wide. Gently spray it with avocado oil cooking spray. Set aside.
  • Slice the potatoes and add them to a mixing bowl. Toss them with the avocado oil until lightly coated. Season with a pinch of kosher salt and cracked black pepper.
  • Next, add the sliced red bell pepper and sliced onion to a mixing bowl. Toss with a light coating of avocado oil and season with a pinch of kosher salt and a few turns of cracked black pepper.
  • Add a handful of the prepared potatoes to the center of the foil. Top with sliced red bell pepper and sliced onion. Top everything with a chicken sausage link. Repeat for all four packets.
  • Fold the packets closed but leave a slit for heat to escape. Place packets on the grill for 30 minutes.
  • Shake the packets every 10 minutes to make sure the ingredients don’t get too brown in one spot. You can use tongs to lift and shake.
  • Option to add mozzarella cheese once you take the packets off of the grill. The cheese will melt from the heat of the packets. Serve hot and enjoy!

  • Remove foil and store leftovers in an airtight container in the refrigerator for three to four days. Reheat the food in the microwave. DO NOT put foil in the microwave.

Ingredients

  • 4 links chicken sausage, Smart Chicken, frankfurters
  • 1-2 tablespoons avocado oil, to coat the potatoes / vegetables
  • 1 lb. petite potatoes, white or red, rinse and slice in half
  • 2 medium yellow onions, peel and slice into ½ inch thick slices – roughly 4 slices per onion
  • 2 medium red bell peppers, wash and slice
  • pinch kosher salt, to season
  • few turns cracked black pepper, to season
  • ½ cup shredded mozzarella cheese, optional, add at the end of cooking
