About this Recipe
For these quick chicken sausage foil packets, I used Smart Chicken organic chicken sausages. They have a variety of flavors, but I used the organic uncured chicken frankfurters and their organic sweet apple uncured chicken sausages. Both tasted amazing, but I really enjoyed the frankfurters. They reminded me of grilling hot dogs as a kid, except these frankfurters are much healthier and better tasting! Made from all organic, clean ingredients you can feel good feeding these chicken sausages to your family.
You can keep the sausages whole in the foil packet or you can slice them into coins. Either way will work perfectly. Also, you want to be sure to shake the foil packet every 10 minutes to prevent any of the ingredients from getting too brown in one spot. Another tip, is to make sure you use petite white or red potatoes and slice them in half. They cook more quickly than larger potatoes. You will also want to toss them with a little olive oil. This will help prevent any sticking.
For this easy dinner recipe, I also added red and orange bell peppers, sliced sweet onions and some salt and pepper. It’s such a simple meal but is loaded with so much flavor. If you want, try sprinkling a touch of shredded mozzarella cheese over the top just as they come off of the grill. It will melt from the heat of the packets and taste delicious.
Storage

Quick Chicken Sausage Foil Packets
Equipment
- 4 pieces of 18 inch aluminum foil
Ingredients
- 4 links frankfurters, Smart Chicken
- 1 lb. petite white or red potatoes, rinsed and sliced in half
- 2 medium sweet onions, peeled and sliced into ½ inch thick slices. I got 4 slices per onion
- 2 medium red bell peppers, washed and sliced
- 1 tablespoon avocado oil
- salt and pepper, to taste
- ½ cup shredded mozzarella cheese, optional, garnish at the end of cooking
Instructions
- Preheat the gas grill to 400 degrees. Pull a piece of aluminum foil that is 18 inches long and wide. Gently spray it with avocado oil cooking spray.
- Toss the potatoes with the avocado oil and add a handful to the center of the foil. Next, add the red bell peppers, onion and salt and pepper. Top everything with a whole chicken sausage link or sliced sausage coins.
- Fold the packets closed but leave a slit for heat to escape. Place packets on the grill for 30 minutes. Be sure to shake the packets every 10 minutes to make sure the ingredients don’t get too brown in one spot. Option to add mozzarella cheese once you take the packets off of the grill. Serve hot and enjoy!

I know it may seem odd, but I made these while camping and they were perfect! The kids loved that they got to personalize theirs by picking the veggies they wanted in the packet. They cooked perfectly over the grill and I am sure they would probably cook really well over the fire too.
