Make the Pasta

Boil a pot of water, season it with kosher salt and cook the ditalini pasta according to the package. Al dente is best. Drain off the excess water using a colander, drizzle with avocado oil and set the pasta aside.

Make the Sauce

Heat a sauté pan over medium high heat. Add the avocado oil. Once the oil is hot, add the mild Italian ground sausage. Sauté the sausage until it’s golden brown, then add the diced onion and minced garlic. Sauté until the onion is translucent. These handy silicon spatulas are great for safely mixing your ingredients without damaging your pans.

Next, add the tomato paste and allow it to lightly caramelize in the pan for 2-3 minutes. Season everything with a pinch of kosher salt and a few turns cracked black pepper.

Next, deglaze the pan with low sodium chicken broth. Once the broth reduces by half, reduce the heat to medium and add the heavy cream. Stir well. Next, add the grated parmesan cheese. Once the cheese is melted, add the cooked pasta. Toss until everything is well coated in the sauce. Garnish with red pepper flakes and enjoy!

If the sauce gets too thick, add a touch of broth to help loosen it back up.
