Combine the halved cherry tomatoes, freshly chopped dill, thinly sliced Persian cucumber, crushed salted pistachios, finely diced shallots, and a few turns of cracked black pepper. Toss the tomato salad with the dressing making sure it is well coated. Taste for seasoning. Set aside to marinate.

I made a test run of this dip because I want to bring it to a friend’s house for a party later in the week. All I can say is that I am not a big feta fan in general, but dang if this dip isn’t delicious! I think it is totally worth it to get the good feta.
