How to Keep Guacamole from Turning Brown
When exposed to air, avocados will oxidize and turn brown. To prevent this from happening, you can squeeze a thin layer of fresh lime or lemon juice over the top layer of the guacamole. This prevents the oxygen from reaching the avocado, which prevents browning. Alternatively, you can limit oxygen exposure by placing a thin layer of plastic wrap over the guacamole. Less oxygen exposure equals less browning.
How to Make Guacamole with a Mortar and Pestle
Add the garlic cloves, diced onion, sliced jalapeno, salt and fresh squeezed lime juice into the mortar bowl. Use the pestle to smash it. Once paste like, add the avocado and smash it all together with the pestle.
Once well combined, use a spatula to gently fold in the diced Roma tomatoes and chopped cilantro.

In a large mixing bowl, smash the avocado, salt and lime juice together. You can use a fork for spoon.

Storage
