Ingredients Needed for Tzatziki Style Chicken Salad
Chicken – For this recipe, you’ll need one pound of Smart Chicken tenderloins or breasts. Boil the chicken for 15 minutes or until the internal temperature reaches 165 degrees Fahrenheit. Once cooked, drain and cool. Cube the chicken into bite-sized pieces.
Vegetables – You’ll need cored and diced English cucumber, rinsed and drained chickpeas, and diced red onion for this recipe.
Herbs / Seasoning – This recipe simply calls for salt, pepper and freshly chopped dill.
Dressing – Combine 0% Greek yogurt, olive oil, fresh squeezed lemon juice, mild dill pickle juice, salt, minced garlic and warm water. Mix until well combined.
Feta Cheese – Option to top the entire dish with feta cheese. This salty cheese adds so much flavor to this recipe. If you do not like feta, you can use shredded mozzarella or halloumi.
How to Make Tzatziki Style Chicken Salad
Make the Dressing
In a small mixing bowl, combine 0% Greek yogurt, olive oil, fresh squeezed lemon juice, mild dill pickle juice, minced garlic, salt, and warm water. Mix until well combined. Set aside.
Prepare the Chicken
Boil a pot of water and cook the chicken tenderloins for 15 minutes or until the internal temperature reaches 165 degrees Fahrenheit.
Drain the water and let the chicken cool.
Once cool to the touch, cube the chicken into bite-sized pieces.
Assemble the Dish
Combine the diced chicken, cored and diced cucumber, rinsed and drained chickpeas, finely diced red onion, chopped dill, salt and black pepper. Mix until well combined.
Add the dressing and toss until everything is well coated.
Top with crumbled feta and enjoy.
Storage
