Healthyish Jalapeno Artichoke Cheese Dip
This lightened up Jalapeno Artichoke Cheese Dip is easy to make and loaded with flavor. Perfect for game day or as a Healthyish dip to snack on through the week. While this recipe isn’t much of a looker, I can guarantee you’ll be making this dip regularly. It’s super addicting. In fact, I almost ate the entire bowl….Even my husband (who can’t handle spice) fell in love with this recipe.
What Makes it Healthyish?
Most of the jalapeno artichoke dip recipes I’ve eaten call for cream cheese, mayonnaise, parmesan cheese and/or sour cream. This dip is lightened up by eliminating the mayonnaise, parmesan cheese and sour cream. Instead, this dish calls for 2% cottage cheese, cream cheese and white cheddar cheese. All of which offer a lot of protein and taste delicious together.
Ways to Enjoy This Dip
Serve this dip with your favorite crackers, wheat thins or tortilla chips. To keep things light, serve it alongside baby carrots, celery or sliced cucumber. Leftover dip can be tucked into a wrap for a fun twist on your weekday lunch.
Ingredients Needed for Healthyish Jalapeno Artichoke Cheese Dip
Cheese – For this recipe, you’ll need 2% cottage cheese, softened cream cheese, and shredded white cheddar cheese. It’s best to grate the white cheddar cheese fresh from the block. You can really taste the difference.
Jalapeno – For this recipe, you’ll need finely diced fresh jalapeno. Gently fold the diced jalapeno into the dish using a spatula. Option to remove the seeds if you do not like too much spice.
Please Note: If you opt for canned jalapeno, just know it is much milder than fresh jalapeno. Also, if you decide to add this recipe to a food processor, the oils in the jalapeno will be much hotter than if you gently fold the diced jalapeno into the dish. You will need to adjust accordingly if you deviate in any way.
Artichoke Hearts – You’ll need marinated artichoke hearts for this recipe. Be sure to drain a 12-ounce jar, which will yield 7-ounces of artichoke hearts. Finely dice the drained artichoke hearts and gently fold them into the dip using a spatula.
Pepperoncini Juice – You’ll need two tablespoons of mild pepperoncini juice for this recipe. It acts as a binder and adds a layer of flavor that’s irresistible.
Seasoning – Season this dish with salt and black pepper.
How to Make Healthyish Jalapeno Artichoke Cheese Dip
In a mixing bowl, combine the softened cream cheese, 2% cottage cheese, shredded white cheddar cheese, finely diced fresh jalapeno, finely diced artichoke hearts, pepperoncini juice, salt and black pepper. Mix well using a spatula.
Once well combined, top with extra diced jalapeno and shredded white cheddar.
Serve slightly chilled and enjoy.
Storage

Would it work to substitute the artichoke marinade for the pepperoncini juice?
