Tips and Tricks to Perfectly Grated Eggs
For this recipe, I suggest using store-bought hardboiled eggs that have been peeled and refrigerated. If you do not have them handy, be sure to cook your eggs until the yolk is fully set inside.
Once you peel the eggs, let them rest in the refrigerator for 30-40 minutes so they are not too soft on the outside. When they are too soft they are harder to grate.
Also be sure to use a sharp microplane grater. Dull blades will make this technique hard to achieve.
Ingredients for Grated Egg Avocado Toast
Toast – For this recipe, be sure to use a sturdy bread that toasts up nicely. Crusty French bread, artisanal bread or even sourdough would all work great.
Kewpie Mayo – Add a thin layer of kewpie mayo to the toasted bread. The creamy, rich mayo tastes amazing with the egg.
Avocado – Use half of a small avocado per each slice of toast. Be sure to slice the avocado thin and place it over the mayo.
Egg – You will use one hardboiled egg per slice. Gently grate it using a microplane grater. You will add the egg on top of the avocado.
Sriracha – Add a few dots of sriracha on top of the egg. This adds a little spice which tastes amazing.
Seasoning – Season with a pinch of salt and black pepper before enjoying.

Use your microplane grater to shave the egg on top of the avocado. Season with salt, pepper and a few dots of sriracha.
Best enjoyed immediately. You can also try adding some other toppings. Ingredients like grated cheese, shallots, green onions or hot sauce would all taste great! Any extra grated egg can be stored in the refrigerator.

This is a brilliant idea. I came across this on Instagram not realizing it had gone viral on TikTok. Normally not one to partake in food trends that go viral…I loved this one. As someone who doesn’t have time to cook eggs in the morning before work I can easily hard boil the eggs ahead of time (I’ve found 10 minutes is perfection for a hard boiled egg) and then just assemble everything in the morning. Looooove a heavy drizzle of siracha on top. Pro tip: zap in microwave for a few seconds to take the chill off the egg and avocado if you’re using an avocado from the fridge.
I don’t know why I’ve waited so long to try these grated eggs!!! I put mine on a wrap with some laughing cow cheese nd hot sauce because I didn’t have any yummy toast or avocado. Omg the grated egg is a game changer! Love the texture! Sarah, you are a wizard!!!
