Piped over your favorite toast, this avocado cottage cheese mousse is irresistible. Topped with the light and fluffy grated egg, a pinch of red pepper flakes and a few turns of cracked black pepper this recipe is simple yet elevated!

Substitutions and Ingredients Needed
Hard-Boiled Eggs – This recipe calls for hard-boiled eggs. Option to make your own or buy store-bought hard-boiled eggs that have already been peeled. You’ll need one egg per slice of toast. Handy grater.
Toast – You can use whatever bread you love the most. However, I suggest toasting up a slice of fresh sourdough. The chewy texture, tangy flavor and crispy outside that this recipe to the next level.
Mousse – Combine half of a medium sized avocado and 1/3 cup of 2% cottage cheese in a mini blender. Blend until smoother and creamy.
Seasoning – Season this toast with a pinch of red pepper flakes and a few turns of cracked black pepper. It’s so good!
How to Make Grated Egg Avocado Toast
Blend the Mousse
Combine half of a medium sized avocado, and 1/3 cup of 2% Good Culture cottage cheese in a mini blender. Blend until smooth and creamy. Add to a piping bag and cut off the tip.
Toast the Bread
Toast one to two slices of your favorite bread.
Assemble
Pipe the mousse onto the toasted bread. Grab your grater and gently grate the hard-boiled egg over the top of the mousse. Season with a pinch of red pepper flakes and few turns of cracked black pepper. Enjoy!
How to Store
This recipe is best enjoyed immediately! Over time, the avocado will oxidize and brown which is not appealing. So, once you whip the mousse and grate the egg enjoy!
Frequently Asked Questions
Can I use any brand of Cottage Cheese? Honestly, I would suggest you use 2% Good Culture. Every brand of cottage cheese holds varying amounts of moisture which can change the consistency of the mousse.
For example, too much moisture and the mousse will be runny. Too little moisture and the mousse will be too thick. 2% Good Culture cottage cheese works every time!
I don’t have Good Culture what should I do? If you can’t but Good Culture in your area, and your cottage cheese seems very runny, use a cheesecloth to squeeze out some moisture before blending. Adversely, you can add a touch of milk, if it is too thick.
What type of grater do I need? Here is a link to the graters I bought. I used the one on the right in the image.
How do I boil eggs? Add eggs to a pot and cover with cold water. Bring the water to a boil, then reduce the heat to a simmer. Cook for 11-12 minutes. Once cooked, place the eggs in cold water to bring down the temperature. Carefully peel and grate.
