Simple yet gourmet. This recipe is very simple to make but looks gourmet. Your friends and family will be impressed.

Recipe Ingredients

  • Broccoli – You’ll need three bunches of broccoli for this recipe. Simply trim the ends, leaving the stem intact. Slice the broccoli into long strips. Place the cleaned and trimmed broccoli on a baking tray lined with parchment paper. For best results, do not overcrowd the pan. Also, you may need to reduce the cooking time if you’re only using the broccoli heads and not the full stem.
  • Oil – This recipe calls for a drizzle of olive oil. Option to use avocado oil.
  • Seasoning – Season the broccoli with kosher salt and a few turns of cracked black pepper.
  • Spicy Peanut Sauce – Combine creamy peanut butter, low sodium soy sauce, sriracha, maple syrup, rice vinegar, sesame oil and warm water. Still well. For a thinner sauce add a touch more warm water.
  • Toppings – Top this dish with chopped scallions, sesame seeds, crushed peanuts, and a squeeze of fresh lime juice. Serve with extra lime wedges.

How to Make Roasted Broccoli with Spicy Peanut Sauce

Preheat the oven to 425 degrees. Line a baking tray with parchment paper and set it aside.

Prep the Broccoli

Clean and trim your broccoli leaving the stems intact. Slice the broccoli into long strips. Add the broccoli to the prepared baking tray and drizzle it with olive oil, kosher salt and cracked black pepper.

Roast

Roast for 25-30 minutes or until the broccoli is lightly charred and tender. I like my broccoli slightly firm and crispy, so I roasted mine for 25-ish minutes.

Make the Sauce

While the broccoli is roasting, combine the spicy peanut sauce. Which includes, creamy peanut butter, maple syrup, sriracha, low sodium soy sauce, rice vinegar, sesame oil and warm water. Mix until well combined.

Add Toppings

Remove the broccoli from the oven and top it with a drizzle of the spicy peanut sauce. Hit it with sesame seeds, chopped scallions and crushed peanuts. Add a squeeze of fresh lime and serve with extra lime wedges. Enjoy.

Storage

Store leftovers in an airtight container in the refrigerator for two to three days. Store the spicy peanut sauce separately if possible. Warm in the microwave when reheating.

Frequently Asked Questions

Can I use broccoli florets instead of broccoli with the stem?

Yes, however you’ll need to reduce the roasting time.

What happens if I overcrowd the pan?

Overcrowding the pan prevents the broccoli from getting crispy. Instead you’ll end up steaming the vegetables versus roasting them.
