Asian Inspired Roasted Broccoli with Spicy Peanut Sauce
This Asian Inspired Roasted Broccoli with Spicy Peanut Sauce is a weeknight win! The entire dish comes together in under 30 minutes and tastes amazing. Topped with homemade spicy peanut sauce, crushed peanuts, scallions, sesame seeds and lime wedges, this recipe is hard to resist.
Preheat the oven to 425 degrees. Line a baking tray with parchment paper and set it aside.
Prep the Broccoli
Clean and trim your broccoli leaving the stems intact. Slice the broccoli into long strips. Add the broccoli to the prepared baking tray and drizzle it with olive oil, kosher salt and cracked black pepper.
Roast
Roast for 25-30 minutes or until the broccoli is lightly charred and tender. I like my broccoli slightly firm and crispy, so I roasted mine for 25-ish minutes.
Make the Sauce
While the broccoli is roasting, combine the spicy peanut sauce. Which includes, creamy peanut butter, maple syrup, sriracha, low sodium soy sauce, rice vinegar, sesame oil and warm water. Mix until well combined.
Add Toppings
Remove the broccoli from the oven and top it with a drizzle of the spicy peanut sauce. Hit it with sesame seeds, chopped scallions and crushed peanuts. Add a squeeze of fresh lime and serve with extra lime wedges. Enjoy.

Notes
Store leftover broccoli in an airtight container in the refrigerator for up to three days. Store extra peanut sauce in a separate container in the refrigerator for up to three -four days. Reheat broccoli in the microwave until warmed through.
