Ground Chicken Lasagna Roll Ups
These ground chicken lasagna roll ups are the perfect weeknight meal. They come together in under one hour and taste delicious. The added ground chicken and sautéed onions adds extra protein and flavor to this recipe. Once you have lasagna this way, you’ll never go back to the flat, layered cheese lasagna. What Makes This Chicken Lasagna A Roll Up?
These are called roll ups because the ingredients are all rolled up into the pasta like a log. This makes it a great dish for on-the-go snacking, not to mention it’s fun to eat! These ground chicken lasagna roll ups are one of my favorite dishes to make as a roll up because it is so easy to roll the ingredients into the pasta, rather than laying it out in layers. You’re already working with a lot of flat, layered ingredients that it only makes sense to roll it to make something fun and exciting with it.
How to Make Ground Chicken Lasagna Roll Ups
Preheat the oven to 375 degrees. Boil water and cook the lasagna sheets according to the package. Al dente is best. Drain water using a colander and set the cooked pasta aside. Drizzle it with olive oil to prevent sticking.
Next, heat olive oil and butter in a sauté pan over medium heat. Add the diced onion and minced garlic, once fragrant add the ground chicken. Season with salt and cracked black pepper to taste.
Once the chicken is cooked through and the vegetables are lightly browned remove the pan from the heat. Next, heat three cups or one 25-ounce jar of your favorite pasta sauce in a separate sauce pot.
Then, combine ricotta, egg, shredded mozzarella, grated parmesan cheese, onion powder, garlic powder, dried oregano, salt and cracked black pepper in a mixing bowl. Mix until well combined.
Assemble the Lasagna Roll Ups
Add one cup of sauce to the bottom of a 9×13-inch dish. Take one sheet of cooked lasagna and add about 1.5 – 2 tablespoons of the ricotta mixture followed by 1.5 – 2 tablespoons of the chicken mixture. Roll the pasta up and place the roll up on the bed of sauce. Repeat until you have 12 roll-ups.
Cover the roll ups with the remaining sauce and shredded mozzarella cheese. Cover with foil and bake for 25 minutes. Option to remove the foil cover and broil for crispy cheese. Serve hot and enjoy.
Can I Substitute or Add Ingredients?
A little creativity in the kitchen is never a bad thing, so enjoy modifying this recipe to your liking! Add mushrooms, chicken alfredo, or even bacon. If you do try it with modifications, be sure to let us know what you did and how it turned out in the comments.
Some of my favorite spins on this recipe include adding tomato chunks (drained and patted dry) into the recipe with the white chicken. You may also find that adding cooked spinach (drained and patted dry) adds a burst of nutritious flavor to these roll ups. If you don’t like ricotta, a lot of people try to substitute cream cheese, making the dish heavier, but I don’t recommend this as it isn’t easy and takes a lot more time.
Storage
Store any leftovers in an airtight container in the refrigerator for three to four days. It’s OK if you notice condensation on the container, as it should not affect the integrity of the rollups. Reheat leftovers in the microwave in 20 to 30-second bursts until heated through. Chances are, however, you won’t have a chance to store these before they get eaten. They’re too delicious to leave in the fridge, and have a surprisingly healthy amount of protein thanks to the chicken and cheese!

Equipment
- 1 9×13 inch baking dish
- 1 sauce pot
- 1 pasta pot

Ingredients
Ground Chicken Mixture
- 1 lb. ground chicken, Smart Chicken

- 1 tablespoon butter
- 1 large sweet onion , diced
- 2 teaspoons garlic, minced

- 3 cups pasta sauce, marinara or similar
Cheese Filling
- 1.5 cups ricotta cheese
- 1 cup shredded mozzarella, extra as garnish
- 1 large egg
- ¼ cup grated parmesan cheese
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon cracked black pepper
