Ingredients Needed for Air Fryer Salmon Fish Sticks with Whipped Feta

Salmon – You’ll need one pound of salmon for this recipe. A thick center cut slice works best. Remove the skin and any pin bones from the salmon. Slice the salmon into 3-inch long and 1 – 1.5-inch thick slices. I was able to get 8 salmon sticks from one pound of salmon.

Breading – You’ll need to setup a breading station for the salmon. Grab three bowls. Add cornstarch, paprika, garlic powder, salt and black pepper to one bowl, mix well. Add an egg to the second bowl, whisk well. And add the panko breadcrumbs to the third bowl.

Whipped Feta – You’ll need good feta cheese, 0% Greek yogurt, fresh squeezed lemon juice and good olive oil for this recipe. Top the whipped feta with a drizzle of olive oil, cracked black pepper and fresh dill.

Side Salad – You’ll need fresh arugula, halved cherry tomatoes, diced English cucumbers, thinly sliced red onion, juice from half a lemon, a drizzle of olive oil, pinch of salt and a touch of black pepper.

How to Make Air Fryer Salmon Fish Sticks

Prepare the Fish

Remove the skin and any pin bones from the salmon. Slice the salmon into 3-inch long and 1 – 1.5-inch thick slices. I was able to get 8 salmon sticks from one pound of salmon.

Bread the Salmon

Grab three bowls. Add cornstarch, paprika, garlic powder, salt and black pepper to one bowl. Mix well. Add an egg to the second bowl, whisk well. And add the panko breadcrumbs to the third bowl. Start by grabbing one piece of salmon and running it through the cornstarch mixture, followed by the egg, and the panko breadcrumbs. Making sure it’s lightly coated. Repeat for all salmon sticks until they are all breaded.

Air Fry the Salmon Fish Sticks

Preheat the air fryer to 400 degrees. Spray the basket with avocado oil cooking spray. Add the fish sticks, but do not overcrowd the basket. Spray the top of the fish sticks with avocado oil cooking spray. Bake for 5-6 minutes turning halfway through.

Make a Salad

Combine a handful of arugula, halved cherry tomatoes, diced English cucumbers, thinly sliced red onion, juice from half a lemon, a drizzle of olive oil and a pinch of salt and black pepper. Mix well.

Assemble the Dish

Add the salmon fish sticks to a serving dish, alongside the whipped feta and side salad. Serve and enjoy.

  • ½ teaspoon paprika
