Ingredients Needed for Grilled Chicken Blackberry Salad

Chicken – You’ll need 12-ounces of Smart Chicken’s chicken breasts for this recipe. Two, 6-ounce breasts work perfectly. Drizzle the chicken with olive oil, salt and pepper for a simple marinade.

Avocado Oil – You’ll need one tablespoon of avocado oil to brush over the grill grates. Brushing the grates with avocado oil will prevent the chicken from sticking to the grill.

Vegetable / Fruit – This recipe calls for mixed greens, sliced avocado, toasted sliced almonds, fresh blackberries and thinly sliced red onion.

Cheese – You’ll need crumbled goat cheese for this recipe. The goat cheese is tangy, creamy and tastes amazing with the other ingredients.

Dressing – Combine olive oil, balsamic vinegar, fresh squeezed blackberry juice, honey, salt and black pepper.

How to Squeeze Fresh Blackberry Juice

For fresh blackberry juice simply place a mesh strainer with a handle over a glass bowl. Add 6-ounces of fresh blackberries to the strainer and gently press them into the mesh strainer until all the juice has been extracted into the bowl beneath. You can use the back of a spoon or a rubber spatula to gently press the berries. Extra juice can be added to water for flavor or used in a fun cocktail.
