- Chicken – For this recipe, you’ll need one pound of Smart Chicken tenderloins or breasts. Boil the chicken for 15 minutes or until the internal temperature reaches 165 degrees Fahrenheit. Once cooked, drain and cool. Cube the chicken into bite-sized pieces.
- Vegetables – You’ll need cored and diced English cucumber, rinsed and drained chickpeas, and diced red onion for this recipe.
- Herbs / Seasoning – This recipe simply calls for kosher salt and cracked black pepper. Plus, extra fresh dill as garnish.
- Dressing – Combine 0% Greek yogurt, extra virgin olive oil, fresh squeezed lemon juice, kosher salt, cracked black pepper, minced garlic, water and freshly chopped dill. Mix until well combined.
- Feta Cheese – Option to top the entire dish with feta cheese. This salty cheese adds so much flavor to this recipe. If you do not like feta, you can use shredded mozzarella or halloumi.

How to Make Tzatziki Style Chicken Salad
Make the Dressing
Combine 0% Greek yogurt, extra virgin olive oil, fresh squeezed lemon juice, kosher salt, cracked black pepper, minced garlic, water and freshly chopped dill. Mix until well combined.
Prepare the Chicken
Boil a pot of water and cook the chicken tenderloins for 15 minutes or until the internal temperature reaches 165 degrees Fahrenheit. Drain the water and let the chicken cool. Once cool to the touch, cube the chicken into bite-sized pieces.
Assemble the Dish
Combine the diced chicken, cored and diced cucumber, rinsed and drained chickpeas, finely diced red onion, kosher salt and cracked black pepper. Mix until well combined. Add the dressing and toss until everything is well coated. Top with fresh dill and crumbled feta.
Storage
Store leftover chicken salad in an airtight container in the refrigerator for three to four days. Serve chilled. Option to tuck it into wraps, enjoy over lettuce or scoop it up with crackers.
Expert Tips
- If using garlic powder in the dressing, use about 1/2 teaspoon instead of 1 teaspoon.
- The feta cheese is salty, so keep this in mind when you’re seasoning your chicken salad. You do not want it to be too salty.
