How to Segment an Orange

Using a sharp knife, cut the ends off of your orange. Stand the orange upright and slice off the outer skin or peel. Once the segments are exposed, you will be able to see the membrane. The membrane is the thin, paper like connective tissue that holds the orange together. Simply slice next to the membrane on the right side of the segment then again on the left side of the segment. The orange segment should easily pop out, free of any membrane. Repeat for all the orange segments.

Salmon – You’ll need about one pound of salmon for this recipe. Cube it into bite-sized pieces. Option to leave the skin on.

Blackening Seasoning – Combine onion powder, garlic powder, oregano, paprika, salt, cracked black pepper and cayenne powder in a small mixing bowl. Mix well then season the cubed salmon. Toss until the salmon is well coated.

Avocado Oil – You’ll need a neutral oil to shallow fry the seasoned salmon bites. I like using avocado oil, but vegetable oil or canola would work well too. Cook the salmon to your liking.

Citrus Salad – Combine finely diced jalapeno, segmented orange, cubed avocado, freshly chopped parsley or cilantro, finely diced shallots, sliced mini cucumbers, lemon juice, olive oil, salt and cracked black pepper. Mix well and set aside.

Rice – Add the salmon bites and citrus salad over a bed or white or brown rice. A ¼ cup of uncooked rice will yield about 1 cup of cooked rice. Perfect for two people.

Garnishes – Top everything with a touch of furikake. Option to add some crushed peanuts too.

How to Make Spicy Salmon Bites with Citrus Avocado Salad

Cube the salmon into bite sized pieces. Toss it with the spice blend of garlic powder, onion powder, dried oregano, salt, cracked black pepper, paprika and cayenne powder. Toss until the salmon is well coated. Set aside.

In a large mixing bowl, combine finely diced jalapeno, segmented orange, cubed avocado, chopped Italian parsley or cilantro, finely diced shallots, sliced mini cucumbers, lemon juice, olive oil, salt and cracked black pepper. Toss until well combined. Set aside.

Heat avocado oil in a non-stick pan over medium high heat. Add the seasoned cubed salmon. Cook to your liking. Assemble the bowl.

Storage

Ingredients

Blackening Spice

  • 1 teaspoon dried oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon cracked black pepper
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon paprika

Blackened Salmon

  • 12 ounces salmon, debone, cube and season
  • ¼ cup white rice, uncooked, yields about 1 cup cooked
  • 1 tablespoon avocado oil, for pan frying

Citrus Avocado Salad

  • 2-4 tablespoons jalapeno, finely dice, about 1 jalalpeno
  • 2 oranges, peel and segment, see above
  • 1 large avocado, peel, pit and cube
  • ¼ cup shallots, finely dice
  • ⅓ – ½ cup cucumber , mini cucumber if possible
  • cup Italian parsley, or cilantro, chopped small
  • 1 tablespoon lemon juice, fresh squeezed
  • 1 tablespoon olive oil
  • salt, to taste
  • cracked black pepper, to taste
  • 1 teaspoon furikake , sprinkled over the bowls

  • 2 mixing bowls
  • 1 non-stick skillet
