This Mexican star soup is comfort food at its finest. Serve it up alongside a grilled cheese, or some toasted butter bread and you’re in for a cozy homemade meal. Mexican Star Soup – Healthyish Foods

Ingredients Needed for Mexican Star Soup

Olive Oil – You’ll need good olive oil for this recipe. I use Delallo Foods olive oil and it tastes amazing.

Garlic / Onion – For this recipe, you’ll need minced garlic and diced sweet onion. Sauté the garlic and onion in the pan with the olive oil.

Seasoning – Season the garlic and onions with salt, dried oregano and cracked black pepper.

Tomato Paste – You’ll need 1-2 tablespoons of tomato paste for this recipe. Mix it in with the sautéed onions and garlic.

Whole Peel Tomatoes – You’ll need a 14 ounce can of whole peeled tomatoes with the juice for this recipe.

Chicken Broth – For this recipe, you’ll need chicken broth or stock. I used bone broth for the added health benefits. My favorite brand is Smart Chicken organic original chicken bone broth.

Star Pasta – You’ll need star shaped pasta for this recipe. I used La Moderna star pasta for this recipe, and it worked perfectly. You’ll need to pan fry the pasta in a pan with some olive oil before adding it to the soup.

How to Make Mexican Star Soup

Grab a Dutch oven or large soup pot and add 1 tablespoon olive oil over medium heat. Add the diced onions and minced garlic and sauté until soft. Season with salt, cracked black pepper and oregano. Add the tomato paste and stir well. Saute for 1-2 minutes.

Next, add the whole peeled tomatoes with juice. Stir well. Once heated through, add the mixture to a food processor or blender and buzz until smooth, no lumps. Add the puree back into the Dutch oven. Pour in the chicken bone broth and water. Simmer over medium heat stirring occasionally.

Next, grab a non-stick skillet and add one tablespoon olive oil over medium heat. Add the package of dry pasta to the hot oil and sauté it for 2-3 minutes. Stirring frequently. Once slightly golden brown in color, add the fried pasta to the hot soup. Stir well. Once the pasta is tender, taste for seasoning and enjoy hot. If the soup gets too tight, add more broth.

Optional Add-Ins

You can add other ingredients to this soup as well. Some ideas include, beans, parmesan cheese, pesto, or whatever you enjoy most.

Storage

Store leftover soup in an airtight container in the refrigerator for three to four days. Reheat in the microwave.
