Alphabet Soup – Healthyish Foods

Growing up my grandma always made us alphabet soup. She would gently fry the pasta in a pan until it was slightly golden brown before adding it to the broth. She always said frying it first added more flavor to the soup, and she wasn’t wrong. You can also boil the pasta separately and add the cooked pasta to the broth, but I highly suggest trying it this way first.

How to Make Alphabet Soup

Grab a Dutch oven or large soup pot and add 1 tablespoon olive oil over medium heat. Add the diced onion and minced garlic. Sauté until translucent and lightly browned. Next, add one can of whole peeled tomatoes with juice. Stir well. Season with salt and black pepper.

Once heated through, add everything to a food processor or blender and buzz until smooth, no lumps. Add the puree back into the Dutch oven. Add the bone broth and water. Simmer over medium heat stirring occasionally.

Next, grab a non-stick skillet and add one tablespoon olive oil over medium heat. Add the package of dry alphabet pasta to the hot oil and sauté it for 2-3 minutes. Stirring frequently. Once slightly golden brown in color, add the fried pasta to the hot soup. Stir well. Once the pasta is tender, taste for seasoning and enjoy hot. If the soup gets too tight add more broth.
