Ingredients Needed for Leftover Pasta Frittata

Butter / Olive Oil – For this recipe, you’ll need both butter and olive oil.

Leftover Pasta – You’ll need 2-3 cups of leftover pasta. Angel hair works best but you can use whatever you have handy.

Eggs- For this recipe, you’ll need 6 eggs. Whisk the eggs well in a large mixing bowl.

Cheese – For this recipe, you’ll use a combination of grated parmesan cheese and shredded mozzarella. Adding both cheeses will make this dish extra flavorful.

Seasonings / Herbs – Season this dish with salt, cracked black pepper and garlic powder. You will also add about 2 tablespoons freshly chopped Italian parsley.

Leftover Bacon – Use leftover bacon scraps and crumble them on the top of this dish before serving.

How to Make Leftover Pasta Frittata

Preheat the oven to 350 degrees.

In a large mixing bowl, whisk the eggs.

Next, add the roughly chopped leftover pasta, parmesan cheese, shredded mozzarella cheese, salt, garlic powder, cracked black pepper and Italian parsley. Mix well.

Heat an 11-inch non-stick, oven-safe skillet over medium high heat.

Add butter and olive oil to the pan.

Once melted, pour the egg and pasta mixture into the prepared skillet.

Reduce the heat to low and allow the eggs to set to 1-2 minutes.

Sprinkle the top with extra mozzarella cheese and finish baking the dish in the oven for 18-20 minutes.

Sprinkle with crumbled bacon and enjoy.
