- Brie Log – You’ll need one 6-ounce brie log. It is fine to leave the thin rind on.
- Dates – You need 6 pitted dates for this recipe. I like to open them up and slice them into thin pieces. Roughly 5-6 slices per date. Each roll-up will need 3-4 slices of date based on size.
- Butter – Once rolled tightly, brush the rollups with melted butter and air fry.
- Honey – Drizzle the crispy roll-ups with honey.
- Sesame Seeds – Sprinkle sesame seeds over the roll-ups.
- Walnuts – Toast some walnuts in a pan. Chop them into small pieces and sprinkle over the roll-ups.
- Flaky Sea Salt – Finish these roll-ups with a pinch of flaky sea salt.
Variations
- Swap the nuts. Instead of toasted and chopped walnuts you can use chopped pecans, pistachios or toasted and chopped pine nuts.
- Swap the filling. I used sliced dates, but you could use sliced dried figs, raisins or even dried cranberries or dries apricots.
- Bake instead. You can bake these roll-ups instead of air frying them. Follow the baking instructions on the box.
Expert Tips
- Use an oil sprayer for a light even coating of oil over the phyllo dough. This will prevent the phyllo dough from getting too saturated.
- Only use 2-3 sheets per roll. Otherwise, the rolls get too thick.
- I like cutting my brie log into 12 sticks. For a cheesier roll-up you can cut your brie log into 8 sticks instead.
- Preheat your air fryer to 375 degrees and do not overcrowd the basket. Overcrowding the basket will prevent the roll-ups from getting golden brown on all sides. It will also impact the cooking time.
- Cover the phyllo dough with a damp paper towel to prevent it from drying out while you work.
How to Make Phyllo Wrapped Brie Roll-Ups
Step 1: Unwrap the brie log and slice it in half down the center. Then slice each half in half.
Step 2: Then take each quarter and slice it into three long sticks. You’ll have 12 sticks total.
Step 3: Unroll the phyllo dough.
Step 4: Cut it in half widthwise.
Step 5: Grab three pieces of phyllo and place it on a clean surface.
Step 6: Lightly spray the three phyllo sheets with olive oil.
Step 7: Add one stick of brie cheese and 3-4 slices of pitted dates.
Step 8: Fold the sides of the phyllo in over the ends of the cheese / dates
Step 9: Roll it up. Brush the roll-up with melted butter and repeat for all.
Step 10: Place the roll-ups on a prepared baking tray.
Step 11: Air fry the roll-ups at 375 for 3 minutes. Work in batches as needed.
Step 12: Add the crispy roll-ups to a serving platter and top with a drizzle of honey, chopped toasted walnuts, sesame seeds and a pinch of flaky sea salt. Serve warm and enjoy.
Storage
Best enjoyed immediately. Store leftovers in an airtight container in the refrigerator for three to four days. Reheat in the microwave until warmed through.

I would not make these ahead bc the phyllo dough dries out quickly! but fig jam should work fine!
