I saw this simple ice cream recipe going viral on TikTok and knew I had to give it a try. The texture is thick, creamy, and absolutely delicious. I was blown away by how good this cottage cheese ice cream tastes. It’s the perfect Healthyish swap for sugary ice cream. And with a Snickers twist, you’re going to fall in love with this easy dessert recipe
Why You’ll Love This Recipe
This version adds EVEN MORE protein by adding healthy, protein packed, peanut butter powder versus regular creamy peanut butter. Plus, the peanut butter powder has less fat too.
This recipe comes together in under 10 minutes, and you don’t even need an ice cream maker. Simply buzz the cottage cheese, maple syrup, and peanut butter powder together in a food processor. Fold in the chopped pitted dates and add to a freezer friendly, sealable container. Top with crushed peanuts and a drizzle of chocolate and you’re ready to freeze.
What’s great is that you can customize this recipe any way you like. I’ve seen people make strawberry cheesecake, banana, chocolate and more. There are so many delicious combinations, so you can really get creative with it.
Ingredients Needed for Snickers Inspired Cottage Cheese Ice Cream
- Cottage Cheese – This recipe calls for 16 ounces, full fat cottage cheese to achieve the smooth texture and to capture all the protein gains. I used Good Culture Full Fat Cottage Cheese for this recipe.
- Maple Syrup – This recipe calls for ¼ cup maple syrup. You can use honey instead if you prefer.
- Peanut Butter Powder – This recipe calls for ¼ cup PBfit Peanut Butter Powder. I did not test any other powders in this recipe.
- Pitted Dates – For this recipe, you’ll need 3 pitted dates. Chop them into small pieces as these will act like the “caramel” from a traditional Snickers.
- Peanuts – This recipe calls for crushed peanuts as a topping. Just like you’d see in a Snickers.
- Chocolate Wafers – This recipe calls for two tablespoons of melted dark chocolate wafers. I use Ghirardelli Dark Chocolate Wafers because they melt so well.

Allergic to peanuts can I use almond flour?
no, there is no flour in this recipe.
what can i sub in place of the peanut butter powder?
could i use fine almond flour instead?
So the peanut butter powder is literally pulverized peanut powder… I would not use any type of flour as a substitute….If you do not have peanut butter powder you can add a touch of regular peanut butter and blend it in. If it’s an allergy, just skip the peanut butter.
How much is a serving size?

I kept seeing similar recipes all over but this Snickers version sucked me in! It was absolutely delicious. It reminds me a bit of frozen yogurt.
