Ingredients needed for Cheesy Deviled Egg Breakfast Sandwiches

Hard Boiled Eggs – You’ll need 6 hard boiled eggs for this recipe. Slice them in half lengthwise and remove the yolks.

Egg Filling – Combine the yolks with mayonnaise, tabasco, salt and black pepper. Mix well and add the mixture to a piping bag. If you do not have a piping bag, you can use a sealable bag and simply trim the corner so the filling can squeeze out easily.

Cheese- Once the egg whites are filled with the yolk mixture, simply dip them in shredded cheese. I used mozzarella and it worked perfectly.

Chives – Once the eggs are browned, top them with freshly chopped chives.

Breakfast Meat – This recipe calls for breakfast sausage links. I used Smart Chicken’s chicken breakfast sausage, but you can use whatever you enjoy most. Bacon or fried ham would work as well. However, if you use the links, slice them in half lengthwise and brown them in a skillet. Once browned and cooked through, you can slice them in half again width wise. This way they are the same size as the eggs.

How to Make Cheesy Deviled Egg Breakfast Sandwich

Slice six hard boiled eggs in half and remove the yolks. Place the yolks in a bowl and combine them with mayonnaise, tabasco, salt, and black pepper. Mix until smooth and creamy.

Add the yolk mixture to a piping bag and pipe the filling back into the egg white halves. Add shredded cheese to a plate and spread it out. Dip the eggs in the cheese making sure it adheres to the filling. Repeat for all eggs.

Brown your breakfast sausage links. Slice them in half lengthwise and brown them in a non-stick skillet. Once browned and cooked through, you can slice them in half again widthwise. This way they are the same size as the eggs.

Heat a clean non-stick skillet over medium high heat and lightly spray it with avocado oil spray. Place the eggs on the hot pan cheese side down. Sear for 20-40 seconds or until the cheese browns. Carefully flip the eggs. When flipping the eggs, make sure to get under the browned cheese so it sticks to the egg and doesn’t slide off.

Remove from the pan. Top the eggs with chopped chives and add a piece of the sausage to one side of the cheesy egg. Top it with another cheesy egg to form a sandwich and enjoy!

Storage
