How to Make Caramelized Onion Blackened Chicken
Saute the Onions
Add olive oil to a nonstick skillet over medium low heat. Add the sliced onions and sauté until tender and caramelized. Season with a few turns of cracked black pepper and a pinch of kosher salt. Remove from the heat and set aside.
Saute the Chicken
Butterfly your chicken breasts into four thin cutlets. Toss them with the blackening spice mixture of garlic powder, oregano, onion power, paprika, kosher salt, cracked black pepper, and cayenne. Make sure they’re well coated on both sides.
Saute the Chicken and Assemble
Heat a second nonstick skillet over medium high heat. Add olive oil. Once hot, add the seasoned chicken. Cook for 5-6 minutes per side or until cooked through.

Great weekday dinner! We couples it with sautéed mushrooms and it gave it a Philly cheesesteak vibe. The seasonings on the chicken made it super flavorful. Whole house smelled great.
