Caramelized Onion Blackened Chicken
This caramelized onion blackened chicken recipe is perfect any night of the week. Made from simple ingredients, you can pull this entire meal together in under 30 minutes. The chicken is pan roasted with a simple blackening spice, then topped with caramelized onion and provolone or mozzarella cheese.

Ingredients Needed for Caramelized Onion Blackened Chicken
Chicken Breasts – For this recipe, grab Smart Chicken’s chicken breasts and butterfly them into four thin cutlets.
Butter / Olive Oil – You will need both olive oil and butter for this recipe.
Blackening Spice – Season the chicken with garlic powder, onion powder, salt, black pepper, cayenne pepper, paprika, and dried oregano.
Onions – You will need 2-3 onions for this recipe. Be sure to peel them and slice them about ½ inch thick.
Provolone Cheese – For this recipe, you will need 3-4 slices of provolone or mozzarella cheese.
Italian Parsley – Garnish the dish with some freshly chopped Italian parsley.
How to Make Caramelized Onion Blackened Chicken
Add olive oil to a non-stick skillet over medium heat. Add the sliced onions and sauté until tender. Season with a few turns of cracked black pepper. Remove from the heat and set aside.
Cut your chicken breasts into four thin cutlets. Toss them with the blackening spice. Make sure they’re well coated. Heat a non-stick skillet, add butter and olive oil. Once hot, add the seasoned chicken. Cook for 5-6 minutes per side or until cooked through. Top the chicken with the sautéed onions and provolone cheese. Add a touch of water to the pan. The steam will help melt the cheese.
Top with freshly chopped Italian parsley. Enjoy.

Great weekday dinner! We couples it with sautéed mushrooms and it gave it a Philly cheesesteak vibe. The seasonings on the chicken made it super flavorful. Whole house smelled great.
