Caprese Grilled Chicken Sandwich
This caprese grilled chicken sandwich is what dreams are made of. The chicken is juicy and tender and tastes so good with the fresh ripe tomatoes, melted mozzarella cheese and balsamic glaze. Oh, and don’t forget the toasted pretzel roll. It adds a layer of flavor that’s hard to resist.
Ingredients Needed for Caprese Grilled Chicken Sandwich
Chicken – For this recipe be sure to use Smart Chicken’s boneless skinless chicken breasts. I used two breasts and left them whole. You can also butterfly them if you want to spread the chicken out a little further.
Seasoning – Season the chicken with olive oil, salt and black pepper before adding it to the grill.
Mozzarella Cheese – I used thinly sliced soft mozzarella cheese for this recipe. It ,elted perfectly and tastes amazing.
Tomatoes – Slice your favorite tomatoes for this recipe. I used heirloom but you can use whatever you enjoy most.
Lettuce – Be sure to add some butter lettuce on to this sandwich. You could also use basil if you prefer.
Balsamic Glaze – Drizzle some balsamic glaze over the sandwich for an extra punch of flavor.
Pretzel Roll – For this recipe, I used a toasted pretzel roll. It added a layer of flavor that was hard to resist. You can use any bread or roll you enjoy most.
For this Recipe
For this recipe, I left my chicken breasts whole. They were quite thick, so I grilled them for 10-12 minutes per side. You can also butterfly and pound them if you want to spread the meat out a little further. Butterflying (cutting them in half) will give you four thin cutlets vs. two thick breasts. Please note, butterflying the meat will also decrease the cooking time on the grill.
How to Make Caprese Grilled Chicken Sandwich
Preheat the grill to 450-475 degrees. Add foil to the grill. Pound the chicken then toss it with olive oil, salt and black pepper. Add the chicken breasts to the grill. Grill for 10-12 minutes.
Turn the chicken over, reduce the heat to 400 and grill for another 10-12 minutes or until the internal temperature reaches 165 degrees. Add a few slices of mozzarella to the chicken. Once melted remove from the grill.
Build the Sandwich
Toast the pretzel rolls. Add one breast to each roll. Top with sliced tomatoes and lettuce. Drizzle with balsamic glaze. Top and enjoy.

- 4 pieces butter lettuce
