Recipe Ingredients
- Prosciutto – This recipe calls for thin sliced prosciutto. You’ll need roughly 14 slices or 6 ounces.
- Mozzarella – You’ll need low moisture mozzarella sticks for this recipe. Slice them in half widthwise and lengthwise so they are not too thick.
- Mixed Olives – I used a blend of kalamata and green pitted olives for this recipe. Be sure to chop them small.
- Balsamic Glaze – Be sure to grab balsamic glaze and not balsamic vinegar. Balsamic glaze is reduced to a thick sticky sauce which works great for this recipe.
- Nuts – You’ll need toasted and chopped pine nuts for this recipe.
- Basil – Finish this recipe with some fresh basil chiffonade. It adds a layer of brightness and freshness to this dish!
Expert Tips
- Make sure the sliced prosciutto is cold. It is easier to work with.
- When adding the mozzarella cheese and chopped olives, add them to the far end of the prosciutto then roll it up. This helps keep everything locked inside.
- When pan searing, lightly spray your nonstick skillet with avocado oil spray. This will help the prosciutto get a crispy sear.
Variations
Swap the cheese. Instead of mozzarella cheese, you can try Boursin cheese or goat cheese instead.
Swap the nuts. If you’re not a fan of toasted pine nuts, you can try toasted pecans, pistachios or walnuts instead.
Add a cracker. If you want, you can place the roll-up on a cracker for easy lifting, but it’s not necessary.
How to Make Crispy Prosciutto and Mozzarella Cheese Roll Ups
Step 1: Toast the pine nuts in a pan and set aside. Add one slice of prosciutto to a cutting board.
Step 2: Add half of a mozzarella stick.
Step 3: Add some mixed chopped olives.
Step 4: Roll it up and repeat until everything is rolled up.
Step 5: Pan sear for 1-2 minutes per side.
Step 6: Add to a serving platter and top with balsamic glaze, toasted pine nuts and freshly cut basil.

No! However, the mozzarella cheese will not melt unless you pan sear them.
I’d suggest prepping everything in advance and pan searing the roll-ups right before you are ready to enjoy. Keep the chopped pine nuts, balsamic glaze and basil stored separately. Add these items right before serving.
Store leftovers in an airtight container for three to four days. If possible, store the basil and nuts separately.

Crispy Prosciutto and Mozzarella Roll-Ups
Equipment
- 1 griddle pan sear the roll-ups
- 1 nonstick skillet toast the pine nuts
Ingredients
- 6 ounces prosciutto, thin sliced, about 14 pieces
- 7 mozzarella cheese sticks, cut in half for 14 pieces
- ¼ cup mixed olives, chopped small, kalamata and green pitted olives
- drizzle balsamic glaze, over the top
- 2 tablespoons pine nuts, toasted and roughly chopped
- 4-5 leaves basil, remove stems and chiffonade
Instructions
TOAST THE PINE NUTS
- Toast the pine nuts in a small nonstick skillet over medium heat. Once cool, roughly chop the toasted pine nuts. Set aside.
ASSEMBLE THE PROSCIUTTO ROLL-UPS
- Lay a piece of prosciutto down flat. Add 1/2 of a mozzarella cheese stick and a small amount of mixed chopped olives. Roll it up. Repeat until everything is rolled.
PAN SEAR THE PROSCIUTTO ROLL-UPS
- Heat a nonstick griddle pan over medium high heat. Lightly spray it with avocado oil spray. Pan sear the roll-ups for 1-2 minutes on each side. Or until they are lightly golden brown.
- Remove them from the pan and add to a serving platter. Drizzle with balsamic glaze, toasted pine nuts and freshly chopped basil. Serve warm and enjoy!

Flavor was great and definitely easy, but the Boursin just melted out into the pan while waiting for the prosciutto to get crispy. Did I miss a step about needing to freeze the Boursin first or something? One turned out crispy and the rest were not because I had to pull them early. I had the heat low-medium low the entire time.
This recipe calls for mozzarella! Perhaps that is why.
