If you love an easy appetizer recipe, then you’re in the right spot. These Crispy Prosciutto and Mozzarella Roll-Ups are savory, delicious and easy to prepare.
Toast the pine nuts in a small nonstick skillet over medium heat. Once cool, roughly chop the toasted pine nuts. Set aside.
ASSEMBLE THE PROSCIUTTO ROLL-UPS
Lay a piece of prosciutto down flat. Add 1/2 of a mozzarella cheese stick and a small amount of mixed chopped olives. Roll it up. Repeat until everything is rolled.
PAN SEAR THE PROSCIUTTO ROLL-UPS
Heat a nonstick griddle pan over medium high heat. Lightly spray it with avocado oil spray. Pan sear the roll-ups for 1-2 minutes on each side. Or until they are lightly golden brown.
Remove them from the pan and add to a serving platter. Drizzle with balsamic glaze, toasted pine nuts and freshly chopped basil. Serve warm and enjoy!

Store leftovers in an airtight container in the refrigerator for three to four days.
