Ingredients Needed for Oven Baked Crispy Chicken Thighs
Chicken Thighs – You’ll need 2.5 pounds of bone-in, skin-on Smart Chicken’s chicken thighs. Make sure to pat them dry with a paper towel before adding olive oil, seasoning, mayonnaise and parmesan cheese.
Olive Oil – For this recipe, coat the chicken thighs with olive oil. High quality olive oil will help the chicken to crisp up in the oven.
Seasoning – Combine Italian seasoning, paprika, garlic powder, onion powder, salt, and black pepper. Season the chicken with the spices and make sure it’s well rubbed in.
Mayonnaise / Parmesan Cheese – Lastly, coat the chicken with mayonnaise and grated parmesan cheese. The mayonnaise and cheese help lock in the juices and add a layer of deep flavor to the thighs.
Temperature Guide for Oven Baking Chicken Thighs
- Bone-In Chicken Thighs at 350°F – 50-55 minutes
- Bone-In Chicken Thighs at 375°F – 45-50 minutes
- Bone-In Chicken Thighs at 400°F – 40-45 minutes
- Bone-In Chicken Thighs at 425°F – 35-40 minutes
Chicken thighs may vary in size so it’s a good idea to use a meat thermometer any time you are cooking poultry. The internal temperature should reach 165 to ensure doneness.
How to Make Oven Baked Crispy Chicken Thighs
Preheat oven to 425. Line a baking tray with a wire rack. Spray the rack with non-stick cooking spray.
Prepare the Chicken
Pat the chicken dry (very dry) with a paper towel. Add it to a mixing bowl and drizzle it with olive oil. Rub the oil in well.
Next, add the spice blend, (salt, pepper, Italian seasoning, paprika, onion powder, garlic powder), grated parmesan cheese and mayonnaise. Rub the chicken until it’s well coated in the spices, cheese and mayo.
Place the chicken on the prepared baking tray, skin side up. Bake for 25 minutes then reduce the heat to 400. Bake for another 15-20 minutes or until the juices run clear and the chicken reaches and internal temperature of 165 degrees.
Storage

This was so easy and flavorful! My husband and I loved them!
Okay I followed the recipe exactly but I also added some chicken breasts that I cut down to a similar size to the thighs. Everything turned out amazing! We had it with just some mixed veggies and leftover mashed potatoes. It was one of the most flavorful dinners and so easy.
