Ingredients Needed for Grilled Cilantro Lime Chicken with Mango Salsa

Chicken – You’ll need one pound of Smart Chicken’s chicken breasts for this recipe. Butterfly the two breasts into four thin cutlets.

Marinade – Combine avocado oil, fresh cilantro, fresh squeezed lime juice, honey, diced garlic, and salt in a glass mixing bowl. Add the chicken cutlets and toss until they are well coated. Cover and refrigerate for 30 minutes.

Avocado Oil – You’ll need extra avocado oil for this recipe. Use the extra oil to brush the grill grates to prevent the chicken from sticking to the grill.

Mango Salsa – This recipe calls for diced mango, diced red onion, diced jalapeno, diced red bell pepper, fresh squeezed lime juice, salt and fresh cilantro. Gently toss everything together until its well combined. Cover and refrigerate until you’re ready to use it.

Garnishes – Serve this dish with fresh lime wedges, sliced avocado and rice for a heartier meal.

Tips for Perfectly Grilled Chicken

Preheat the grill and be sure to brush the grates with avocado oil right before you add the chicken. This will prevent the meat from sticking to the grates.

When marinating the chicken, be sure to use a glass bowl that you can seal or cover with saran wrap. Or you can use a sturdy Ziplock bag. DO NOT use a metal bowl. The metal is reactive and can alter the flavor of the chicken as it marinates over time.

Marinate this recipe for 30 minutes. Since this recipe has fresh squeezed lime juice (acid) in the marinade the protein in the chicken will break down quickly. If you marinate for too long the chicken could get mushy. So it’s best to marinate for under 4 hours.

How to Make Grilled Cilantro Lime Chicken with Mango Salsa

Marinate the Chicken

Butterfly the chicken breasts and set them aside.

Combine avocado oil, fresh cilantro, fresh squeezed lime juice, honey, diced garlic, and salt in a glass mixing bowl. Add the chicken cutlets and toss until they are well coated. Cover and refrigerate for 30 minutes.

Make the Mango Salsa

Combine diced mango, diced red onion, diced jalapeno, diced red bell pepper, fresh squeezed lime juice, salt and fresh cilantro. Gently toss everything together until its well combined. Cover and refrigerate until you’re ready to use it.

Grill the Chicken

Preheat the grill to 400-450 degrees. Brush the grates with avocado oil. Add the marinated chicken cutlets to the hot grill. Cook for 5-6 minutes per side or until the chicken reaches an internal temperature of 165 degrees Fahrenheit. Remove from the grill. Top with mango and serve with fresh lime wedges and sliced avocado. Enjoy.

Storage

Store any leftover chicken and mango salsa in separate containers in the refrigerator for three to four days. Reheat extra chicken in the microwave until warmed through.

Cilantro Lime Chicken

  • 1 lb. chicken breasts, butterflied, Smart Chicken
  • ¼ cup cilantro
  • 2 tablespoon avocado oil
  • 1 tablespoon lime juice, fresh squeezed
  • 1 tablespoon honey
  • 1 teaspoon garlic, diced small, about 1 large clove
  • ¼ teaspoon salt

Mango Salsa

  • 1.5 cups mango, peel, pit and dice
  • ¾ cup red bell pepper, core and dice small
  • ⅓ – ½ cup red onion, dice small
  • cup jalapeno, remove seeds, devein and dice small
  • 1 tablespoon lime juice, fresh squeezed
  • 2 tablespoons cilantro, chopped small
  • ¼ teaspoon salt

Garnishes

  • ¼ – ½ avocado, sliced on side
  • 2 cups cooked rice

Equipment

  • 1 glass bowl to marinate the chicken
  • 1 grill brush
  • 1 gas grill
  • 1 mixing bowl for the salsa
