How to Make Caramelized Onion Blackened Chicken

Saute the Onions

Add olive oil to a nonstick skillet over medium low heat. Add the sliced onions and sauté until tender and caramelized. Season with a few turns of cracked black pepper and a pinch of kosher salt. Remove from the heat and set aside.

Saute the Chicken

Butterfly your chicken breasts into four thin cutlets. Toss them with the blackening spice mixture of garlic powder, oregano, onion power, paprika, kosher salt, cracked black pepper, and cayenne. Make sure they’re well coated on both sides.

Saute the Chicken and Assemble

Heat a second nonstick skillet over medium high heat. Add olive oil. Once hot, add the seasoned chicken. Cook for 5-6 minutes per side or until cooked through.

Once the chicken is cooked through, top the chicken with the sautéed onions and provolone cheese. Add a touch of water to the pan and cover the pan. The steam will help melt the cheese. Once the cheese is melted add freshly chopped parsley and serve.
