This flatbread pizza recipe requires you to slow cook one pound of chicken thighs in a crockpot for 3-4 hours in your favorite BBQ sauce. Once the BBQ chicken is cooked through, you can easily shred it. Just make sure you give yourself enough time to prep the chicken before you begin making the flatbreads. Any extra chicken can be used throughout the week for other dishes. Enjoy it on a sandwich, over a salad or tucked inside of a wrap.

How to Make Crockpot BBQ Chicken
Add one pound of boneless skinless chicken thighs to the Crockpot. Add one cup of your favorite BBQ sauce and ¼ cup of chicken broth. If your BBQ sauce is very thick, you can add up to ½ cup of chicken broth. Keep in mind that the chicken thighs will release juices as they slow cook as well.
Set on HIGH for 3-4 hours or until the internal temperature of the chicken reaches 165 degrees. Turn off the heat and use two forks to shred the chicken. It should shred very easily. Let the chicken cool before adding it to the pizzas.
Ingredients Needed for BBQ Chicken Flatbread Pizza
Shredded BBQ Chicken Thighs – You’ll need shredded BBQ chicken thighs for this recipe. Please see above for instruction on how to make shredded Crockpot BBQ chicken.
Flatbread – You’ll need one flatbread for this recipe. I used one Stonefire brand flatbread, and it worked perfectly.
Olive Oil – You’ll need to lightly coat the top of the flat bread with olive oil. This will help the edges get extra crispy when baking.
Cheese – You’ll need ½ cup of shredded mozzarella cheese for this recipe. You can add as much or as little cheese as you desire.
Corn Kernels – You’ll need 1/3 cup of corn kernels for this recipe. I like to grill 1 ear of corn and carefully remove the kernels. You can also use canned corn but be sure it’s well-drained before adding it to the flatbread pizza.
Red Onion – Thinly slice red onion and add about 1/3 cup to the flatbread.
Parsley – Roughly chop some fresh parsley for this recipe. Add the fresh parsley as garnish to the cooked flatbread pizza.
How to Make BBQ Chicken Flatbread Pizza
Preheat the oven 425 degrees. Place one flatbread on a baking tray. Lightly brush it with olive oil.
Add a layer of mozzarella cheese followed by corn kernels and thinly sliced red onion. Add a layer of shredded BBQ chicken and place the flatbread in the oven on the middle rack for 9-10 minutes. I like a crispy crust, so I did 10 minutes.
Remove from the oven, top with extra BBQ sauce and fresh chopped parsley. Enjoy!
Storage
