These air fryer salmon fish sticks with whipped feta dip take fish sticks to a whole new level. The salmon is perfectly air fried keeping it light and crispy. Dip your sticks in the tangy and creamy whipped feta for the ultimate flavor combination.
Remove the skin and any pin bones from the salmon. Slice the salmon into 3-inch long and 1 -1.5-inch thick slices. I was able to get 8 salmon sticks from one pound of salmon.
Bread the Salmon
Grab three bowls. Add cornstarch, paprika, garlic powder, salt and black pepper to one bowl. Mix well. Add an egg to the second bowl, whisk well. And add the panko breadcrumbs to the third bowl. Start by grabbing one piece of salmon and running it through the cornstarch mixture, followed by the egg, and the panko breadcrumbs. Making sure it’s lightly coated. Repeat for all salmon sticks until they are all breaded.
Air Fry the Salmon Fish Sticks
Preheat the air fryer to 400 degrees. Spray the basket with avocado oil cooking spray. Add the fish sticks, but do not overcrowd the basket. Spray the top of the fish sticks with avocado oil cooking spray. Bake for 5-6 minutes turning halfway through.
Make the Whipped Feta
Combine good feta cheese, 0% Greek yogurt, lemon juice and good olive oil in a small food processor. Buzz until smooth and creamy. Add to a small serving dish. Top with a drizzle of olive oil, cracked black pepper and fresh dill.
Make a Salad
Combine a handful of arugula, halved cherry tomatoes, diced English cucumbers, thinly sliced red onion, juice from half a lemon, a drizzle of olive oil and a pinch of salt and black pepper. Mix well.
Assemble the Dish
Add the salmon fish sticks to a serving dish, alongside the whipped feta and side salad. Serve and enjoy.
