Personally, I like to enjoy my Santa Fe chicken over a bed of cooked white rice. Then, I top the bowl with sliced avocado, shredded cheddar cheese, arugula, fresh chopped cilantro, thinly sliced jalapeno and sliced green onion. Ingredients Needed for Santa Fe Inspired Chicken Bowls
Ground Chicken Mixture – You’ll need avocado oil, minced garlic, diced sweet onion, diced red bell pepper, ground chicken, taco seasoning, corn kernels, black beans, red enchilada sauce, chicken broth and whipped cream cheese.
Taco Yogurt Dressing – Combine 0% Greek yogurt, fresh squeezed lime juice, diced green chilies from the can, warm water and taco seasoning. Whisk until well combined. Cover and refrigerate until ready to use.
Optional Bowl Ingredients – Option to add white rice, sliced avocado, arugula, sliced jalapeno, freshly chopped cilantro, sliced green onions, shredded cheddar cheese and fresh lime wedges on the side.
How to Make Santa Fe Inspired Chicken Bowls
Make the Dressing
Combine 0% Greek yogurt, fresh squeezed lime juice, diced green chilies from the can, warm water and taco seasoning. Whisk until well combined. Cover and refrigerate until ready to use.
Make the Santa Fe Chicken Mixture
Heat a large non-stick skillet over medium high heat. Add avocado oil. Once the oil is hot, add the ground chicken and taco seasoning. Saute until it is lightly browned. Next, add the minced garlic and diced sweet onion. Sauté for 2-3 minutes. Then, add the diced red bell pepper. Sauté for another 1-2 minutes.
Next, add the corn kernels and black beans. Stir well. Once well combined, deglaze the pan with chicken broth, making sure to scrape up any crispy bits from the bottom of the pan. Then, add the red enchilada sauce, stir well. Finally add the whipped cream cheese. Fold everything together until its well combined.
Assemble the Bowls
Add cooked rice to the bottom of the bowl. Add the Santa Fe chicken mixture, arugula, sliced jalapeno, sliced avocado, shredded cheddar cheese, freshly chopped cilantro, sliced green onion and a drizzle of taco yogurt dressing. Serve and enjoy!
Storage

- 2 teaspoons taco seasoning, store bought is fine
- 1-2 tablespoons warm water, depending on preferred thickness

I came across this recipe when I was searching for something quick to make and that I already had everything on hand for. Turns out I found a new go-to recipe! Everyone loved it. We just ended up wrapping it up in tortillas with some cheese and guacamole. The only thing I didn’t have was the whipped cream cheese, but I used a bit of regular and made sure to melt it well.
