How to Make Cheesy Spinach Baked Eggs
Preheat the oven to 375 degrees. Spray a 5x9-inch glass baking dish with nonstick baking spray. Set aside.
Mix the Eggs
In a large mixing bowl, combine eggs, 2% cottage cheese, grated parmesan cheese, shredded mozzarella cheese, a pinch of kosher salt and cracked black pepper. Whisk until well combined.
