Make the Dressing
In a small mixing bowl, combine 0% Greek yogurt, olive oil, fresh squeezed lemon juice, mild dill pickle juice, minced garlic, salt, and warm water. Mix until well combined. Set aside.
Assemble the Dish
Combine the diced chicken, cored and diced cucumber, rinsed and drained chickpeas, finely diced red onion, chopped dill, salt and black pepper. Mix until well combined. Add the dressing and toss until everything is well coated. Top with crumbled feta and enjoy.
