Air Fryer Chicken and Broccoli

This air fryer chicken and broccoli is easy to make, and jam packed with flavor. Plus, the entire dish is ready in under 30 minutes.
Add the Following to the Remaining Marinade
In a mixing bowl, combine avocado oil, minced garlic, minced ginger, sesame oil, rice vinegar, light brown sugar, low sodium soy sauce, water. Mix well.
Cube the chicken breasts into bite-sized pieces and add it to a mixing bowl. Add the sliced onion and broccoli florets to the bowl with the chicken. Pour about HALF of the marinade over the chicken broccoli and onion. Toss until well coated and season with cracked black pepper.
Add the cubed marinated chicken to the air fryer basket and fry for 18 minutes at 375 degrees. Be sure to toss halfway through cooking.
While the chicken is air frying, take the remaining marinade and add 1 teaspoon cornstarch and ¼ cup more water. Mix well.
Pour this mixture into a small saucepan and simmer over low heat until the garlic and ginger have softened, and the sauce has thickened. If it gets too tight add a touch more water. Pour the sauce over the cooked chicken and broccoli and enjoy hot!
