Salt and Vinegar Roasted Potatoes

These salt and vinegar roasted potatoes are the perfect weeknight side dish. They come together quickly and taste amazing. This roasted potato recipe only requires five simple ingredients.

Ingredients

  • 1 lb. petite red skin potatoes, wash, dry and slice in half
  • 1 tablespoon avocado oil
  • 1 tablespoon white wine vinegar, or apple cider vinegar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2.5 teaspoons apple cider vinegar, or malt vinegar
  • Maldon salt, as garnish

Equipment

  • 1 baking tray
  • 2 mixing bowls

Instructions 

  • Preheat the oven to 400 degrees. Grab a baking tray and spray it with avocado oil spray. Set it aside. Wash and slice you petite red skin potatoes in half.
  • In a small bowl, combine avocado oil, white wine vinegar, salt and pepper. Whisk well. Toss the sliced potatoes with the oil / vinegar mixture. Making sure the potatoes are well coated.
  • Place the potatoes cut side down on the baking tray. Roast for 25-30 minutes occasionally turning the potatoes, so they do not brown too much on any one side.
  • Once fork tender, remove them from the oven and place them back in the large mixing bowl. Toss them with the apple cider vinegar, top with Maldon salt and serve hot.
