Loaded with greens, fresh herbs, and a very light dressing, this is the best butter lettuce salad recipe of all time. Over the years this easy salad recipe has become one of my favorites.
1head butter lettuce, wash and chop into medium sized pieces
1head romaine lettuce, wash and chop into bite-sized pieces
¼cupdill, fresh, chopped small
¼cupItalian parsley, fresh, chopped small
2tablespoonschives, fresh, chopped small
1handful pea shoots
¼cupparmesan cheese, freshly shaved
salt, to taste
pblack pepper, to taste
Dressing:
¼cupolive oil
2tablespoons lemon juice, fresh squeezed, about 1 lemon
1tablespoon honey
salt and pepper, to taste

Instructions
Prepare the Dressing
In a small bowl, combine the olive oil, lemon juice, honey and salt and pepper. Whisk until well combined.
Prepare the Salad
Add the washed, dried, and chopped butter lettuce and romaine lettuce into a large mixing bowl.
Next, add the chopped parsley, dill and chives and gently toss. Option to sprinkle a handful of pea shoots over the top of the salad. Finish with freshly shaved parmesan and a light drizzle of homemade lemon dressing. Add as much or as little dressing as you desire.
Serve immediately after adding the dressing.
