Gluten Free Banana Chocolate Chip Morning Muffins

Ingredients

Dry Ingredients:

  • 2 cups gluten free flour, Outrageous brand
  • ¾ cup cane sugar
  • ¼ teaspoon salt
  • 1 teaspoon baking powder
  • ½ teaspoon vanilla bean specs

Wet Ingredients:

  • 2 large eggs
  • 1 cup 2% milk
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 medium ripe banana , smash the banana in a small bowl using a fork until it is mushy like baby food.

Equipment

  • cupcake tin
  • 3 mixing bowls
  • whisk

Instructions 

  • Preheat oven to 350 degrees.
  • Lightly grease a cupcake pan or line it with cupcake liners.
  • Grab 2 medium sized mixing bowls.
  • In one mixing bowl, combine your dry ingredients. This includes, gluten free flour, salt, cane sugar, baking powder, and vanilla bean specs. Whisk together
  • In the second mixing bowl, combine your wet ingredients. This includes, eggs, milk, vegetable oil, vanilla flavor, and smashed banana. Gently whisk together.
  • Next, you will combine your wet and dry ingredients into one bowl and whisk everything together until a batter forms.
  • As a final step, fold in some chocolate chips for a little pop of sweetness.
  • Portion the batter into the baking pan and bake for 20-25 minutes or until a toothpick inserted in to the center comes out clean.
