Simple salmon burgers for a quick homemade dinner.
Deskin and remove pin bones from the salmon filet, if it’s not already done for you. Next, cube salmon into medium-sized pieces.
Add cubed salmon to a food processor, lightly chop. (Be careful to not over chop salmon. It will make the patties get too dense when cooked.)
Remove the salmon from the food processor and place in a small mixing bowl. Then, add the mustard, finely diced onion, panko breadcrumbs, salt and black pepper. Gently combine.
Form salmon mixture into four evenly sized burger patties. Lightly spray a skillet with cooking spray and cook patties for 4-5 minutes on each side over medium heat. (This will give you a medium-temperature burger.)
For the lemon dill yogurt sauce, combine plain yogurt, capers, lemon juice, olive oil, minced garlic, chopped dill, salt and pepper. in a small bowl. Add toppings of your choice to burgers and finish with a dollop of yogurt sauce.
