Chicken Sausage Lettuce Cups
These chicken sausage lettuce cups are perfect for a quick, healthy lunch. While this recipe is embarrassingly easy to make, some days that’s exactly what you need.
Add olive oil to a skillet over medium heat. Add the sliced onion and julienned red / orange bell peppers. Season with salt and pepper and saute until the veggies are tender but not too soft.
Slice the chicken sausage into coins. Spray a separate skillet with cooking spray and place it over medium heat. Add the sliced chicken sausage. Cook the sausage coins in the pan until they begin to brown.
Combine the tender veggies with the chicken sausage coins and toss everything together. Top the sautéed veggies and chicken with provolone cheese.
Once the cheese is melted, simply spoon some of the mixture into the lettuce cups. Serve and enjoy!
