Chicken Sausage Lettuce Cups

These chicken sausage lettuce cups are perfect for a quick, healthy lunch. While this recipe is embarrassingly easy to make, some days that’s exactly what you need.

Ingredients

  • 1 tablespoon olive oil
  • 1 small yellow onion , peel and slice
  • 2 small bell peppers, sliced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 links chicken sausage, sliced into coins
  • 2 slices provolone cheese
  • 4 pieces butter lettuce, washed and dried

Equipment

  • 1 skillet
  • 1 colander

Instructions 

  • Add olive oil to a skillet over medium heat. Add the sliced onion and julienned red / orange bell peppers. Season with salt and pepper and saute until the veggies are tender but not too soft.
  • Slice the chicken sausage into coins. Spray a separate skillet with cooking spray and place it over medium heat. Add the sliced chicken sausage. Cook the sausage coins in the pan until they begin to brown.
  • Combine the tender veggies with the chicken sausage coins and toss everything together. Top the sautéed veggies and chicken with provolone cheese.
  • Once the cheese is melted, simply spoon some of the mixture into the lettuce cups. Serve and enjoy!
