Line a baking tray with parchment paper. Set aside.
Prepare the tofu:
Drain liquid from the tofu. Make sure to press out any excess moisture using paper towels or a clean kitchen towel. You can also use a tofu press if you have one handy. Removing the moisture allows the tofu to get crispy when cooking.
In a small mixing bowl, combine the mayo, Dijon, maple syrup, paprika, garlic powder, salt and pepper. Stir until well combined.
Crush the pretzels and add them to a plate.
Cut the tofu into 6 even sized slices.
Dredge each piece of tofu through the mayo / dijon mixture. Make sure it's well coated. Next, you'll add it to the plate with the crushed pretzels. Firmly press the pretzel pieces into the tofu to ensure they stick and that each piece is well coated. Repeat for all pieces.
Then, you’ll place the encrusted tofu on the prepared baking tray. Cook for a total of 20 minutes flipping halfway through.
Prepare the spicy mustard sauce:
In a small bowl, combine mayo, mustard, maple syrup, pepper, paprika and salt. Stir until well combined. Set aside.
Remove the tofu from the oven, let it cool for a few minutes and serve warm with a side of the spicy mustard sauce.
