Preheat your oven to 400 degrees.
Spray a baking tray with cooking spray and set it aside.
Open the super firm tofu and press out all of the moisture using a paper towel or kitchen towel.
Cut the tofu into 8 evenly sized rectangles.
Prepare the breading station.
Grab 3 plates. Add the cornstarch to one plate and the egg substitute to the second plate. On the third plate you’ll prepare the breading.
Combine the panko, garlic powder, salt, pepper, and paprika on the third plate.
Coat the tofu pieces with the cornstarch, then the egg wash.
Next, you’ll dredge the tofu through the panko mixture. Making sure all sides are well coated.
Place the tofu on the baking tray. Repeat until all 8 pieces are breaded.
Spray the tofu pieces with more cooking spray to help them get crispy on top.
Bake for 40 minutes. Turn the tofu every 10 minutes.
Broil for the final 2- 3 minutes to give them an extra crispy crust.
