Crock Pot Chicken Thighs

Need a quick and delicious dinner recipe? These Crock Pot chicken thighs are the answer. The meat is fork tender and easily falls apart. The gravy is light, flavorful and oh so tasty.
Heat a pan over medium heat and add the olive oil. Season the chicken thighs with salt and pepper. Add the seasoned thighs to the hot pan and sear for 1-2 minutes per side.
Turn on your Crock Pot and set it to "high heat".
Next, you’ll add the quartered onion, carrots, lemon juice, chicken broth, seared chicken thighs, bay leaves, and fresh thyme. Let it cook for 4 – 5 hours for perfectly tender meat!
Shred the meat using two forks and add it to a platter with a side of the gravy. Garnish with fresh chopped Italian parsley.
