Sweet Potato Hash Browns

Ingredients

  • 2 tablespoons butter, Earth Balance
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup white onion, diced
  • 2 medium sweet potatoes, peeled and diced
  • 1 cup brussel sprouts, shaved into thin slices
  • salt and pepper

Optional Proteins:

  • crispy tofu
  • plant based sausage
  • poached eggs
  • seared salmon

Equipment

  • saute pan

Instructions 

  • Grab a large sauté pan and add the butter, olive oil and minced garlic.
  • Once the garlic is fragrant and beginning to brown, add the onions.
  • Once the onions are translucent, add the diced sweet potatoes to the pan, season with salt and pepper.
  • Next, add the sliced brussel sprouts.
  • Cook until the hash has a nice light brown sear and the vegetables are fork tender.
  • Serve and enjoy!
