Vegan “Ground Beef” Tacos
Prepare the cauliflower, mushrooms and cashews
Grab your food processor. Add the cauliflower and roughly chop it until it's in small pieces. Remove the cauliflower from the food processor and set it aside. Grab your food processor. Add the mushrooms and roughly chop them until they are in small pieces. Remove the mushrooms from the food processor and set them aside. Next, using the food processor roughly chop the cashews into small pieces. Remove the chopped cashews from the food processor and set them aside.
Cook the beef:
In a large sauté pan, over medium heat add butter.
Add the roughly chopped mushroom, cashew, and cauliflower into the pan.
Using your hands, crumble up the ½ block of tofu over the mushroom, cashew, and cauliflower mixture. Begin stirring until well combined.
Add the spices, garlic powder, onion powder, chili powder, cayenne powder, and cumin powder. Blend well.
Cook for 10-15 minutes until the "beef" begins to get slightly crispy on the outside and the cauliflower has softened. Once fully cooked, turn off heat and assemble tacos.
