Hot Honey Sweet Potatoes

Roasted to perfection, these hot honey sweet potatoes are guaranteed to be a hit. Made from a few simple ingredients, these hot honey sweet potatoes are the perfect way to spice up your weeknights.
Preheat the oven to 425 degrees.
Spray a baking tray with olive oil cooking spray.
Wash the sweet potatoes and cube them. About 1-cubic inch.
Add them to the prepared baking tray. Gently spray them with olive oil cooking spray.
Place them in the oven for 25-30 minutes. Turn halfway through.
While roasting, grab a small saucepan and add the butter, hot honey, apple cider vinegar and salt. Mix until well combined and fully melted. Remove from the heat.
Remove the potatoes from the oven.
Drizzle the hot honey sauce over everything. Toss until the potatoes as well coated on all sides. Reduce the heat to 350.
Place them back in the oven for 8-10 minutes or until they are fork tender.
Remove them from the oven, plate them and top them with cracked black pepper and freshly chopped parsley.
