Loaded Taco Fries

These loaded taco fries are a fun twist on taco night. Jam packed with flavor your entire family will love this easy to make recipe.
Preheat the oven to 425 degrees.
Combine light sour cream, lime juice, lime zest, minced garlic and salt in a small mixing bowl. Cover the lime crema and refrigerate.
Wash and dry your potatoes.
Cut them into evenly sized fries and rinse them under cold water.
Pat them dry with a paper towel.
Toss them with taco seasoning and add them to a baking tray.
Drizzle with olive oil making sure all sides are well coated.
Bake for 25 minutes at 425, toss the fries, reduce the heat to 375 and let them finish baking for 20-25.
Boil a pot of water and cook your chicken in the water for 15-20 minutes or until the chicken reaches 165 internally.
Drain the water. Using two forks shred the chicken and set it aside.
Once the fries are cooked, you can add the shredded chicken and shredded cheese.
Place back in the oven for 2-3 minutes or until the cheese is melted.
Next, add the shredded lettuce, diced tomatoes, diced jalapeno, diced black olives, avocado slices, and cilantro. Top everything with the lime crema and enjoy!
