Easy Baked Eggs

These baked eggs are easy to make and super versatile. One way to enjoy these eggs is in freezer friendly breakfast sandwiches.

  • 1 dozen eggs
  • 2 tablespoons chives, finely chopped
  • ¼ cup shredded mozzarella cheese
  • salt and pepper, to taste


  • 1 8x5 baking dish
  • 1 9x13 inch baking dish


  • Preheat the oven to 350 degrees.
  • Grab a 8x5-inch baking dish and spray it with non-stick olive oil spray.
  • Add 12 eggs to the baking dish, try not to break the yolks.
  • Carefully mix in the chopped chives and cheese using a spatula.
  • Season with salt and black pepper.
  • Add the baking dish to a larger dish and fill it with water. You’ll want the water to reach the height of the eggs.
  • Bake for 35-40 minutes or until the eggs are completely set in the center.
  • Use a spatula to release the sides. Flip the dish and slice the eggs how you enjoy.
