Alphabet Soup

This alphabet soup recipe is perfect when you want an easy and delicious soup recipe in a hurry. Made from a few simple ingredients, this soup is guaranteed to be a family favorite.

Ingredients

  • 7 ounces alphabet pasta, gently pan fry before adding to the broth
  • 2 tablespoons olive oil, divided
  • 1 medium sweet onion, diced, about 1 cup
  • 2 teaspoons garlic, minced, about 2 cloves
  • 14 ounces whole peeled tomatoes, with juice, Delallo Foods San Marzano
  • salt, to taste
  • black pepper, to taste
  • 4 cups bone broth
  • 2 cups water

Equipment

  • 1 large soup pot or Dutch oven
  • 1 non-stick skillet

Instructions 

  • Grab a Dutch oven or large soup pot and add 1 tablespoon olive oil over medium heat. Add the diced onion and minced garlic. Sauté until translucent and lightly browned. Next, add one can of whole peeled tomatoes with juice. Stir well. Season with salt and black pepper.
  • Once heated through, add everything to a food processor or blender and buzz until smooth, no lumps. Add the puree back into the Dutch oven. Add the bone broth and water. Simmer over medium heat stirring occasionally.
  • Next, grab a non-stick skillet and add one tablespoon olive oil over medium heat. Add the package of dry alphabet pasta to the hot oil and sauté it for 2-3 minutes. Stirring frequently. Once slightly golden brown in color, add the fried pasta to the hot soup. Stir well. Once the pasta is tender, taste for seasoning and enjoy hot. If the soup gets too tight add more broth.
