Firecracker Chicken Bites

Chicken Bites

  • 1 lb. chicken breasts, cubed, Smart Chicken
  • 2 eggs, whisked
  • 1/4 cup cornstarch
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3/4 cup panko breadcrumbs


  • 1/2 cup buffalo sauce, Frank's Red Hot
  • 1/2 cup brown sugar
  • 2 tablespoons butter
  • 1 tablespoon rice vinegar


  • 1 baking tray
  • 1 mixing bowl
  • 3 plates


  • Preheat the oven to 375 degrees.
  • Line a baking tray with parchment paper.
  • Cube your chicken breasts into bite sized pieces.
  • Setup three plates, one with cornstarch, salt and pepper. The second, with two whisked eggs. The third, with panko breadcrumbs.
  • Dredge the chicken through the cornstarch mixture, then the eggs, then the panko.
  • Place the breaded pieces on the prepared baking tray.
  • Repeat until all the chicken is breaded.
  • Spray the chicken with olive oil cooking spray and bake for 25-30 minutes or until the center reaches 165 degrees Fahrenheit. Flip halfway through.
  • While the chicken bakes, make the sauce.
  • Combine buffalo sauce, light brown sugar, rice vinegar, and butter over low heat. Whisk until well combined.
  • Once the chicken is cooked, grab a large bowl.
  • Add the chicken to the bowl and toss it with the sauce until well coated.
  • Serve hot with freshly chopped green onions. Option to add red pepper flakes.
