Cottage Cheese Protein Bowls

Ingredients

Salad

  • 2 cups arugula
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice, fresh squeezed
  • Pinch salt
  • 4 leaves basil

Protein

  • ½ cup cottage cheese

Macerated Strawberries

  • 1 lb. strawberries, cut into small pieces
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon maple syrup
  • ¼ teaspoon cracked black pepper
  • Pinch salt

Equipment

  • 2 mixing bowls

Instructions 

  • Cut your strawberries into small, easy to eat pieces and add them to a mixing bowl.
  • Next, add maple syrup, balsamic vinegar, black pepper, and salt. Toss well.
  • Let the strawberries marinate for 15-20 minutes.
  • In a separate mixing bowl, combine arugula, olive oil, lemon juice, and a pinch of salt. Toss together.

Build the Bowls

  • Add a handful of the dressed arugula to the bottom of the bowl.
  • Top it with the cottage cheese and a spoonful or two of the macerated strawberries.
  • Finish it with some fresh basil and a turn of cracked black pepper.
  • Enjoy!
